WHere is an easy take on a cocktail featured on our latest menu. This is a large-volume pre-mixed which is loaded full of essence of a holiday season, which makes it perfect for a holiday party. Any leftover syrup to use in breakfast cocktails, desserts, or for more rounds of the drink.

Makes enough for 10 people
To make the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Place the listed components in a pot, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, remove from the stove and leave to cool down entirely. Pour to a sterilised bottle, cap it and refrigerate it chilled, it will last for up to one month.
To make Batch Mix: Mix all the liquids into one sizeable container, allow it to infuse for an hour, then strain best through a fine cloth, making it completely strained.
To serve: Pour 85ml from the premix into a cocktail shaker packed with ice, gently stirring gently for a minute to cool it down. Pour to a frosted cocktail glass or similar, decorate with a few cranberries and complete it by giving it a quick spritz with the mandarin essence over the top.
